Carrot Cake

Carrot Cake

This is the best cake ever, unless you don’t like carrot, nuts or dried fruit. If so you suck anyway.
-2cups flour
-1tsp baking soda
-1T baking powder
-1/4tsp salt
-1tsp ground cinnamon or ginger
-3 egg substitutes
-1/2cups soy milk mixed with 2tsp lemon juice
-2T oil or applesauce
-1cup white sugar
-2tsp vanilla essence
-1½ cups carrot grated
-1/2cup flaked or shredded coconut
-1/2cup nuts (whatever you like)
-1/2cup dried fruit

* Pre heat your oven to 175*C or 350*F and grease up a cake tin.
Sift the flour, baking soda, baking powder, salt and cinnamon in a bowl and put to one side.
In another bowl throw (but aim well) the “egg”, soy milk mixture, oil, sugar, and vanilla. Mix it all together then add your flour mixture and mix well.
In yet another bowl add the carrot, nuts, coconut and dried fruit. Stir it up just like Bob Marley you hippy. Bang that into your cake mix and fold it all together.
Pour into your cake tin and bake for around 35-40 mins.

Cake Icing

-2cups icing sugar
-1/2cup margarine
-1/4tsp salt
-2T water
-1/2tsp liquid for flavor (vanilla, lemon juice, coffee, rum, etc.)

*In a large bowl chuck in all the ingredient. Mix it all up. You might need more water or icing sugar depending on how thick or thin you want it.
